- Butter is unsalted.
- Eggs are large.
- Flour is unbleached all-purpose.
- Sugar is granulated.
- Salt is table salt.
- Fruits, vegetables, herbs, and greens are washed and dried before use.
- All spices are ground.
- Pepper is black and freshly ground.
- Minced: 1/8 inch sized pieces or smaller.
- Chopped fine: 1/8 to 1/4 inch sized pieces.
- Chopped medium: 1/4 to 1/2 inch sized pieces.
- Chopped coarse: 1/2 to 3/4 inch sized pieces.
- Cut into chunks: 3/4 inch pieces or larger.
- Slices: Food is cut into flat, thin pieces, the thickness of which depends on the recipe.
- Diced: Food is cut into uniform cubes, the size of which will depend on the recipe.
- Cut on the bias: Food is cut at an angle, the length of which will depend on the recipe.
